- 18.00 hrs – “5 senses for a Ham”: SENSORY SCIENCE applied to recognition of quality.
Sensory analysis session with the direct participation of the public engaged in the tasting of a vertical selection of cured Parma Ham of various curing/maturing times. Tasting led by a gastronome of the Gastronomic Science Degree Course. Wines pairing: Malvasia dei Colli di Parma, dei Colli di Piacenza e dei Colli di Reggio Emilia. Tastings in collaboration with AIS Parma and Consorzio del Vini dei Colli di Parma
- 19.30 hrs – Before the first night with “AperiVerdi”, different dishes for a song meeting. Tasting of ‘biscottini alla reale’ (biscuits). With the Malvasie Dolci (sweet Malvasia wines) of the Consorzio dei Vini dei Colli di Parma (consortium for the protection of the wines of the Parma hills). The event is promoted by the Verdissime.com Association that presents a preview of the event that will take place from 22nd to 25th September 2015 at the Osteria della Giarrettiera (alias Antica Cereria, Parma).
